Chocolate Cake


3 cups flour
1 3/4 cups white sugar
2/3 cups cocoa powder
2 tsp. baking soda
1 tsp. salt
2 cups water
2/3 cups vegetable oil
2 tsp. vanilla
2 tsp. white vinegar
Mix first five ingredients together well. Add remaining ingredients and mix well again. Pour into greased and cocoa-ed pan(s) and back at 350 degrees or until a toothpick comes out clean. 13 x 9 pan for 30 to 35 minutes. Cupcakes for 15 minutes.

Chocolate Frosting

1/2 cup milk-free, soy-free margarine, softened
1/2 cup unsweetened cocoa powder
2 2/3 cups unsifted confectioners sugar
1/4 cup water
1 tsp. vanilla extract
Beat margarine on medium speed in large mixer bowl until softened, about one minute. Add remaining ingredients. Beat on low speed until ingredients are moistened. Beat on medium speed until creamy.
