Oriental Chicken

3 to 3-1/2 pound chicken pieces

Salt and pepper

2/3 cup or 6 oz. tomato paste

1/3 cup vinegar

1/4 cup water

2/3 cup packed brown sugar

1 Tablespoon soy sauce (Dairy Free)

1 teaspoon cinnamon

1/2 teaspoon ginger


Season chicken pieces with salt and pepper. Place in 9" x 13" pan, skin side down. Bake at 350 F. for 30 minutes. Turn. Bake 30 minutes more. Drain off fat. Combine remaining ingredients in saucepan for 15 minutes, boiling gently stirring occasionally. Pour on chicken and bake 15 minutes longer. Serve hot with rice or side dish of choice.
