Oriental Chicken
3 to 3-1/2 pound chicken pieces
Salt and pepper
2/3 cup or 6 oz. tomato paste
1/3 cup vinegar
1/4 cup water
2/3 cup packed brown sugar
1 Tablespoon soy sauce (Dairy Free)
1 teaspoon cinnamon
1/2 teaspoon ginger
Season chicken pieces with salt and pepper. Place in 9" x 13" pan, skin side down.
Bake at 350° F. for 30 minutes. Turn. Bake 30 minutes more. Drain off fat. Combine
remaining ingredients in saucepan for 15 minutes, boiling gently – stirring occasionally.
Pour on chicken and bake 15 minutes longer. Serve hot with rice or side dish of choice.
